Ingredients
  

Crust ingredients
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar for crust
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon salt
Filling ingredients
  • 1 cup rhubarb, chopped fresh
  • 1/2 cup lemon juice
  • 2 large eggs
  • 1 cup granulated sugar for filling
  • 2 tablespoons all-purpose flour for filling
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking pan.
  2. In a bowl, mix together 1 cup flour, 1/2 cup sugar, softened butter, and salt until crumbly. Press into the bottom of the prepared pan.
  3. In another bowl, whisk together lemon juice, eggs, 1 cup sugar, 2 tablespoons flour, and vanilla extract. Stir in the chopped rhubarb.
  4. Pour the rhubarb mixture over the crust in the baking pan.
Baking
  1. Bake for 35-40 minutes, or until set and golden.
  2. Allow to cool before slicing into bars. Serve and enjoy!

Notes

These bars are delicious served chilled or at room temperature. You can add lemon zest to the filling for an extra citrus boost. Adjust the sugar according to your taste, especially if you prefer a sweeter filling.
