  • 4 cups beef broth Ensure it is gluten-free if necessary.
  • 1 can diced tomatoes Choose those without added sugars.
  • 1 teaspoon Italian seasoning Can substitute with herbs de Provence.
  • Salt and pepper to taste Adjust seasonings based on preference.
  • 1 cup frozen peas (optional) Add at the end for extra color and sweetness.

Preparation
  1. Set the Instant Pot to sauté mode. Add the ground beef and cook until browned, breaking it apart with a spoon.
  2. Add the onion, garlic, carrots, and celery. Sauté for a few minutes until the vegetables soften.
  3. Pour in the beef broth and diced tomatoes. Stir in the Italian seasoning, salt, and pepper.
Cooking
  1. Close the lid, set to sealing, and cook on high pressure for 10 minutes.
  2. After cooking, allow for a natural pressure release.
  3. If using, stir in the frozen peas before serving.

Notes

This soup is versatile; feel free to add other vegetables or substitute ground beef with turkey or lentils for a vegetarian option.
