Ingredients

  • 1 cup macaroni
  • 4 cups chicken or vegetable broth
Cheese and Cream
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
Thickening Agents
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour

  • Salt and pepper to taste

Method
 

Preparation
  1. In a pot, bring the broth to a boil and add the macaroni; cook until al dente.
  2. In a separate pan, melt butter and whisk in flour to create a roux.
  3. Gradually add the heavy cream while whisking until smooth.
  4. Add the melted cheese to the cream mixture and stir until melted and well combined.
  5. Pour the cheese mixture into the pot with macaroni, stirring well to combine.
  6. Season with salt and pepper to taste. Serve warm.

Notes

Serve warm in bowls, topped with extra shredded cheese, croutons, or parsley. Pair with crusty bread or a fresh salad. For a thicker soup, add more flour to the roux. Customize with different cheeses or cooked vegetables for added nutrition. Can make spicy with jalapeƱos or hot sauce.
