Brownie Ingredients
  • 1 cup grated zucchini Squeeze out excess moisture for firmer brownies.
  • 1/2 cup unsweetened cocoa powder
  • 1 cup all-purpose flour Can substitute with whole wheat flour.
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil Can substitute with applesauce.
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips Feel free to add nuts for extra texture.
Frosting Ingredients
  • 1/2 cup powdered sugar
  • 2 tablespoons cocoa powder
  • 2 tablespoons milk
  • 1 tablespoon butter

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a large mixing bowl, combine the grated zucchini, sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix well until combined.
  3. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chocolate chips.
  5. Pour the batter into the prepared baking pan and spread it evenly.
Cooking
  1. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
Frosting
  1. For the frosting, melt the butter in a saucepan over medium heat. Remove from heat and stir in cocoa powder. Then, add the powdered sugar and milk, mixing until you reach the desired consistency.
  2. Once the brownies are cool, spread the chocolate frosting over the top, slice, and enjoy!

Notes

Serve warm or at room temperature. Pair with a scoop of vanilla ice cream or whipped cream for an extra treat. Store in an airtight container for up to three days or refrigerate for a week.
