Ingredients
  

Zucchini Mixture
  • 2 cups grated zucchini Squeeze out moisture before mixing.
  • 1 large egg
  • ½ cup freshly grated Parmesan
  • ¼ cup cornstarch Ensure it's gluten-free if necessary.
  • to taste Salt and pepper
Cooking Ingredients
  • 2 tbsp fresh churned garlic butter Can substitute with regular butter.
  • 1-2 cups shredded Cheddar Experiment with different cheeses.

Method
 

Preparation
  1. Squeeze the moisture out of the grated zucchini using cheesecloth or a kitchen towel.
  2. Place the dry zucchini in a mixing bowl. Add the egg, Parmesan, cornstarch, salt, and pepper.
  3. Mix well with a fork until combined and it turns into a dough-like texture.
Cooking
  1. Heat the garlic butter in a skillet over medium heat.
  2. Scoop half of the zucchini mixture into the skillet and shape it into a patty. Repeat with the second half.
  3. Cook each patty for 3 to 4 minutes on each side until they are golden and crisp.
  4. Add shredded cheddar cheese on one patty, then place the second patty on top to form a sandwich.
  5. Cook for 3 more minutes until the cheese is melted.
  6. Remove from the skillet, let cool slightly, slice, and serve.

Notes

Serve warm, either on its own or with marinara sauce for dipping. Store leftovers in an airtight container for 2-3 days. Reheat before serving.
