Preparation
- Squeeze the moisture out of the grated zucchini using cheesecloth or a kitchen towel.
- Place the dry zucchini in a mixing bowl. Add the egg, Parmesan, cornstarch, salt, and pepper.
- Mix well with a fork until combined and it turns into a dough-like texture.
Cooking
- Heat the garlic butter in a skillet over medium heat.
- Scoop half of the zucchini mixture into the skillet and shape it into a patty. Repeat with the second half.
- Cook each patty for 3 to 4 minutes on each side until they are golden and crisp.
- Add shredded cheddar cheese on one patty, then place the second patty on top to form a sandwich.
- Cook for 3 more minutes until the cheese is melted.
- Remove from the skillet, let cool slightly, slice, and serve.
Notes
Serve warm, either on its own or with marinara sauce for dipping. Store leftovers in an airtight container for 2-3 days. Reheat before serving.
